Mon's Moroccan Rice Salad
This is an awesome dish to cook up in the beginning of the week to have on hand for lunches, dinners and snacks. High in dietary fiber, and taste!
- Olive oil
- 1 small Onion
- 3 cm piece of Ginger, grated
- 1/4 cup Parsley
- 1 tsp Cumin
- 1/2 cup Sultanas
- 3-4 cups cooked Brown Rice
- 1/2 cup Sunflower Seeds
- 1 Carrot, julienned
Heat Olive oil in fry pan
Fry Onion until transparent then add Ginger, Parsley and Cumin
Add all other ingredients and stir.
