Cranberry & Walnut Loaf
Ingredients
Dry
1/2 cup almond meal
1/2 cup wholemeal spelt flour
1tsp baking powder
1/2 cup desiccated coconut
1/2 cup dried cranberries
1/2 cup walnuts, crushed
Wet
1
egg
2
tbsp
maple syrup
1
tsp
vanilla
1
cup
almond milk
pinch of salt
Instructions
In a bowl, mix dry ingredients together
Add in wet ingredients
lace ingredients in rectangular baking tin
Bake in moderate oven for 30-40 mins
Place a slice in the sandwich press and, enjoy with a big dollop of chia jam or, almond butter! Yummmm.
