Cranberry & Walnut Loaf

Ingredients

Dry

  • 1/2 cup almond meal
  • 1/2 cup wholemeal spelt flour
  • 1tsp baking powder
  • 1/2 cup desiccated coconut
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts, crushed

Wet

  • 1 egg
  • 2 tbsp maple syrup
  • 1 tsp vanilla
  • 1 cup almond milk
  • pinch of salt

Instructions

  • In a bowl, mix dry ingredients together
  • Add in wet ingredients
  • lace ingredients in rectangular baking tin
  • Bake in moderate oven for 30-40 mins
  • Place a slice in the sandwich press and, enjoy with a big dollop of chia jam or, almond butter!  Yummmm.
