I’ve put together my fav 3 immune building snacks that are full of nutrients and immune fortifying goodness to support you and your loved one’s health during this time and always.

Cranberry & Walnut Loaf
Ingredients
Dry
- 1/2 cup almond meal
- 1/2 cup wholemeal spelt flour
- 1tsp baking powder
- 1/2 cup desiccated coconut
- 1/2 cup dried cranberries
- 1/2 cup walnuts, crushed
Wet
- 1 egg
- 2 tbsp maple syrup
- 1 tsp vanilla
- 1 cup almond milk
- pinch of salt
Instructions
- In a bowl, mix dry ingredients together
- Add in wet ingredients
- lace ingredients in rectangular baking tin
- Bake in moderate oven for 30-40 mins
- Place a slice in the sandwich press and, enjoy with a big dollop of chia jam or, almond butter! Yummmm.
Immune Boost Balls
Ingredients
- 2 tbsp nut butter (eg: almond butter)
- 2 tbsp maple syrup
- 1-2 tsp mushroom powder (chaga or reishi)
- 2/3 cup almond meal
- 2/3 cup desiccated coconut
- 2 tsp cacao
Instructions
- Combine ingredients together in a bowl
- Roll mixture into balls. **To make 14 small balls, use 1/2 tbsp per ball. To make 5-7, use 1tbsp per ball.
Rainbow Snack Box
Ingredients
- 1/2 red capsicum sliced
- 1 carrot julienne
- 1 celery stalk julienne
- 1/4 cup blueberries
- 1/4 cup hummus
Instructions
- Arrange veggie sticks and fruit in container and enjoy!
