Simple Vegan Seed Loaf
This loaf is great any-time food .. perfect for school lunches, afternoon tea, smoko or even a quick brekkie! Chia seeds replace eggs as a joiner and also adds a boost of calcium, protein and good fats. The pumpkin seeds add delicious dose of zinc (the stuff your hair, skin and nails love!). Super easy and super tasty. Winning.
Ingredients
- 1/2 cup rapdura sugar
- 1 banana, mashed
- 1 cup wholemeal self raising flour
- 1/2 cup sultanas
- 1/2 cup desiccated coconut
- 1/2 cup pumpkin seeds
- 1tsp chia seeds
- 1 cup nut milk
Instructions
- Preheat oven to 180'C
- Soak chia seeds in nut milk. While chia seeds are soaking, add all other ingredients into a mixing bowl
- Add nut milk and soaked chia seeds to mixture
- Stir well and pour into lined baking tray
- Bake in oven for 2o mins
