Simple Vegan Seed Loaf

This loaf is great any-time food .. perfect for school lunches, afternoon tea, smoko or even a quick brekkie!   Chia seeds replace eggs as a joiner and also adds a boost of calcium, protein and good fats.  The pumpkin seeds add delicious dose of zinc (the stuff your hair, skin and nails love!).   Super easy and super tasty.  Winning.

Ingredients

  • 1/2 cup rapdura sugar
  • 1 banana, mashed
  • 1 cup wholemeal self raising flour
  • 1/2 cup sultanas
  • 1/2 cup desiccated coconut
  • 1/2 cup pumpkin seeds
  • 1tsp chia seeds
  • 1 cup nut milk

Instructions

  • Preheat oven to 180'C
  • Soak chia seeds in nut milk.  While chia seeds are soaking, add all other ingredients into a mixing bowl
  • Add nut milk and soaked chia seeds to mixture
  • Stir well and pour into lined baking tray
  • Bake in oven for 2o mins
