Potatoe Patties #familyfood
A meal time hit with the kids (and adults) in our home, my Veggie Loaded Potatoe Patties are a staple family favourite. Full of fibre, protein, good fats and, taste! Enjoy!
Ingredients
- 500 g potatoes
- 180 g tuna in olive oil
- 1 red capsicum diced
- Kernels from 2 cobs of corn
- 1 carrot finely diced
- 2 tbsp spring onion finely chopped
- 1 egg yolk
- Flour to coat patties (I use spelt)
- 2 tbsp olive oil or coconut oil to cook
- 1-2 tbsps flaxseed meal (OPTIONAL) this is to add in more good fats and protein (a sneaky way to get more nutrition into the kids!)
Instructions
- Cook potatoes in a saucepan of boiling water. Drain and mash. Transfer to a bowl.
- Add egg and tuna to bowl, stir. Then, add capsicum, corn, carrot, spring onion and, flaxseed meal. Combine well.
- Place some flour on a plate. Use 2 tbspns of mixture to shape into 1 pattie. Coat both sides lightly in the flour.
- Heat oil in a frying pan over a medium heat. Cook the patties, In batches, for 3 minutes each side or until golden.
- Serve with a big green salad.
