Easy PEAsy Soup
Ingredients
- 2 leeks pale part only, thickly sliced
- 1 large potatoe roughly chopped
- 4 cups vegetable stock
- 500 g frozen peas
- 2 tbsp lemon juice freshly squeezed
Instructions
- Into a large saucepan, place the leek, potatoe and stock
- Bring to the boil then, simmer for 20 minutes
- Keep 1 cup of peas aside and, add remainder. Bring to simmer for more minutes
- Blend with stick mixer then, return to heat
- Add lemon juice and peas
- Season well and serve in bowls or cups!
