Easy PEAsy Soup

Ingredients

  • 2 leeks pale part only, thickly sliced
  • 1 large potatoe roughly chopped
  • 4 cups vegetable stock
  • 500 g frozen peas
  • 2 tbsp lemon juice freshly squeezed

Instructions

  • Into a large saucepan, place the leek, potatoe and stock
  • Bring to the boil then, simmer for 20 minutes
  • Keep 1 cup of peas aside and, add remainder. Bring to simmer for more minutes
  • Blend with stick mixer then, return to heat
  • Add lemon juice and peas
  • Season well and serve in bowls or cups!
