I love beets! They are sweet, earthy, tender and, sadly, waaaaay overlooked! This brightly hued humble veg has minerals, amino acids, anti-oxidants and, vitamins (A, B1, B2, B3 7 flolic acid). It is known for SO many health-giving reasons. Including, increasing blood flow to the brain (this is a good thing as increased blood flow reduces the possibility of dementia and instead, increases mental functioning. Winning.), reducing blood pressure (within an hour of consuming), detoxifying the liver, and, improving the quality of skin (Beetroot has super high levels of anti-oxidants). Can’t beet it! 😉
