Cheesy Broccoli Spuds
- 4 medium to large potatoes
- 2 tbsp butter
- 2 tbsp milk (dairy or plant based)
- 1 head broccoli, cut into florets and steamed
- 1 cup cheddar cheese, grated
- 1 cup chicken, cooked and shredded or diced
- 1 tsp salt
- 1 tsp pepper
Preheat oven to 180'C.
Prep poatatoes by scrubbing them clean. Poke each potatoe 4-5 times. Place potatoes on baking tray and bake for 1 hour or until cooked through.
Steam broccoli for 2-3 minutes. Chop cooked chicken and grate cheese.
Once potatoes are cooked, cut in half long ways and scoop out the middle. Place the scooped potatoe in a small bowl.
Add butter, milk, salt and pepper to potatoe and mash well. Add broccoli, chicken and 1/2 cup of cheddar cheese.
Place stuffing into potatoe shells and fill well!
Sprinkle the left over cheddar cheese over each potatoe.
Place in oven for 10-15 minutes until cheese is melted.
Serve with green salad and enjoy!
